Olle Mountain Herbs offers a unique dining experience centered around enzyme extracts crafted from over 100 varieties of wild herbs gathered from the mountains and oreums of Jeju, fermented for more than three years. Guests can indulge in exquisite set menus, including lotus leaf rice prepared with house-made wild herb sauce, as well as specialties like tteokgalbi (grilled short rib patties) and abalone, all meticulously aged using these fermented herbal extracts.
